
Spiced Apple Chutney
Makes 1 litre
Ingredients
500g cooking apples
I medium onion
2 red chillies
250g demerara sugar
1 tsp ground allspice
I tsp ground cloves
½ tsp salt
Black pepper
1 heaped tbsp grated fresh ginger
1 tsp turmeric
350ml cider or white wine vinegar
4 x 250ml jars with lids (or equivalent)
Method
STEP 1
Peel, core and roughly chop apples. Chop onions finely. Seed and chop chillies (if you prefer you can use chilli puree, sauce or flakes)STEP 2
Put all ingredients into preserving pan or large wide saucepan and bring to the boil. Cook, stirring, over a gentle heat until the mixture reduces and thickens (approx. 30-40 minutes).STEP 3
Meanwhile wash jars and lids in hot soapy water or dishwasher and put in low oven to warm.STEP 4
Allow to cool slightly and put into jars, sealing lids tightly. Mature for a few weeks before eating.
