Spiced Apple Chutney

Makes 1 litre

Ingredients

  • 500g cooking apples

  • I medium onion

  • 2 red chillies

  • 250g demerara sugar

  • 1 tsp ground allspice

  • I tsp ground cloves

  • ½ tsp salt

  • Black pepper

  • 1 heaped tbsp grated fresh ginger

  • 1 tsp turmeric

  • 350ml cider or white wine vinegar

  • 4 x 250ml jars with lids (or equivalent)

Method

  • STEP 1
    Peel, core and roughly chop apples. Chop onions finely. Seed and chop chillies (if you prefer you can use chilli puree, sauce or flakes)

  • STEP 2
    Put all ingredients into preserving pan or large wide saucepan and bring to the boil. Cook, stirring, over a gentle heat until the mixture reduces and thickens (approx. 30-40 minutes).

  • STEP 3
    Meanwhile wash jars and lids in hot soapy water or dishwasher and put in low oven to warm.

  • STEP 4
    Allow to cool slightly and put into jars, sealing lids tightly. Mature for a few weeks before eating.
